It's sort of a "lasagna" with the noodles replaced by potatoes (and no pasta sauce)! 😇
Sounds delish, minus the olives. This is the same combo of ingredients in the breakfast burritos they serve around here in all the breakfast places, but in a flour tortilla. Yum!
