Cheesy Chorizo Potatoes

Tartiflette is a dish from Savoy in the French Alps.
This is a totally different recipe, but Bond Up North’s article describing his dish gave me the inspiration to combine potatoes, cheese and pork.
Normally I eat very few potatoes, so this seemed like a good opportunity to add a bit more diversity to my diet.
Basic ingredients:
½ pound of chorizo
one potato
6 ounces of cheese
Pre-cook some Chorizo (1/2 pound)
Wash (so you don’t have to peel potatoes) and then slice a potato (you may need slightly more than one potato) and broil for 12 minutes in toaster oven (you will probably have left over potatoes). Broiling dries out the potatoes, adding more texture. Not everyone will like this drier, tougher texture so you may prefer to boil your potatoes first like Bond Up North describes.
Before baking
In glass dish:
Oil bottom (olive oil)
Layer potatoes
Layer chorizo
Layer cheese
Add chopped onion
Add slice green olives
Sprinkle some chopped garlic (if you have it)
Season with salt, garlic, celery seed, turmeric
2nd Layer:
Layer potatoes
Layer chorizo
Add chopped onion
Add slice green olives
Sprinkle some chopped garlic (if you have it)
Splash in a bit of Lime juice (or vinegar if you don’t have lime juice)
Season with salt, garlic, celery seed, turmeric
Layer cheese
Top with bacon bits
Bake in oven for 15 to 20 minutes at 350 degrees
After baking
Serve with organic sour cream
This certainly isn’t the fanciest, gourmet meal. My approach is to try and be practical with a dish that is fairly quick and easy to make, using fresh real ingredients. The real value here is avoiding processed foods.
I do use very high end chorizo and cheese, so if you are using less expensive ingredients the result may not be quite as delicious. My recommendation is to use free range, organic pork (chorizo) and raw (unpasteurized) aged cheese (doesn’t have to be cheddar).

Sounds delish, minus the olives. This is the same combo of ingredients in the breakfast burritos they serve around here in all the breakfast places, but in a flour tortilla. Yum!
